V.A.S.C. AUTOMATIC FERMENTER WITH THE FLOOD OF THE HAT OF MARC

To complete its wide range of fermenters, carryed out in its forty - years experience, De Silla’s company has produced a new sistem of wine - making called V.A.S.C. (automatic fermenter with the flood of the hat of marc): a technological system of wine - making so versatile to be suitable either for the production of the young red wines or for the old wines intended for the process of aging.

This idea was born after the traditional system of wine - making have been propagated either in Italy or in France. We have substitue the stainless steel for the wood and the cement.

The V.A.S.C. is, in short, a fermenter with its flat bottom welded on an auto - supporting platform (or truncated cone un legs). It is completely made of stainless steel with a tank, in a section of the upper part of the cylinder, for the must.
This tank is filled by a centrifuge pump for the recirculation and connected to the rest of the tank by a special valve of big diameter.
This one allows the flood of the marc falling down.

The quantity of the must that accumulates in the upper tank falls back down in the below part, thanks to the opening of the valve.
There is a fall that floods the hat of marc, either in the centre or in the side.
So it is possible to obtain the homogeneity of the temperature of the mass in fermentation and to promote the oxigenation.

The fall (ever taken up centre and sides) is expressly studied and adapted to the diameter of the tank. So we can guarantee an effective fall of the hat of marc in every application.

This system allows to obtain, as result, an efficiency and a quality that are nothing by comparison with the other systems of wine making.

So we obtain a selective extraction of the tannins, of the fragrances, of the carbolic acids and of the antocyans as well as very good intensity of colour that remain in time.

Thanks to a lesser time of the beginning of the fermentation and a reduction of the fermentation’s time, we can obtain a smaller formation of dregs and volatile acidity.
Besides this system helps the extraction and the fixing of colour, fragrances and aromas; so we obtain a clean and a healty wine and guarantee, as result, a qualitatively better product.

It is possible to program suitably the intensity and the frequency of the recirculations (24 hours per day) programming every type of wine - making with every type of red grapes.

Through this process, the marc became more soft and permeable; there is no formation of dangerous pools of must and the phases of racking and of expulsion of the marc are more easy.

These last operations are confided to our patented system of mechanical extraction through a rotary blade and a sash door with gradual opening.
The temperature of the must in fermentation is controled by a cooling jacket situated on the plating of the tank and commanded by a thermostat included on the control panel.

All the above - mentioned operations are confided to a little control panel that can be situated where the winery operator thinks it is right.

This control panel allow to plan the frequency and the lenght of the wine - making cycles either automatically or handly in accordance with different needs.

De Silla’s V.A.S.C. is disposable in a wide range with different capacities and dimensions.
