The De Silla’s “SALLENTIA” fermenter is a non-aerobic fermentation systeme at soft pressure. This one use only the gas (carbon dioxide) produced through the fermentation.Indeed a litre of must in fermentation produces about 50/60 litres of gas in its whole cycle.This gas is missed in the most cases.
Instead, in the “SALLENTIA” fermenter a part of this gas is kept in the top of the tank until to determinate a pressure of 20÷40 mbar.This one is direct through a slow pressure compressor (max 200 mbar) under the hat of marc.Here, it formes some macro-bubbles and it mixes all the marc producing, in this way, a soft and efficient leaching.
